Ready for the Holidays? Typical Puerto Rican Recipes

Arroz con Gandules - Rice with peas
Set Aside:
- 3 tablesppons of Olive Oil
- 2 tablespoons of butter
- pinch of pepper flakes or chili peppers
- 6 fresh culantro leaves-chopped
- 1 onion chopped
- 3 tablespoons of tomato sauce
- 6 olives stuffed with pimientos
- 2 teaspoons of capers
- salt according to taste
- safron (optional)
- cooked peeled peppers
- peas (Gandules) (fresh or canned) - empty water contents and set aside
- rice according to amount of guest*
*when cooking rice the rule of thumb that I use is basically one cup of rice add 1 1/2cups of water
Putting it together:
In a heavy kettel : add your olive oil, chili pepers or pinch of pepper flakes, onion, culantro leaves, tomato sauce, olives, capers, salt, pinch of safron, and peas, cook for about 10 minutes or until onions are tender. Add your rice, mix and cook through. Once all of the ingrediants are mixed add the mixture of rice to the boiling water. Cover slightly the kettle, when the rice dries a bit add the butter, mix with a fork bottom up and cover kettle for approximate 20minutes maximum 30 minutes.
Boil cups of water including the water from peas, keep low after boil.
Once the rice is ready stir once more and to the top of the cooked rice garnish with cooked peppers. Enjoy:)
Total time to prepare and cook approximate 45 minutes, enjoy your typical holiday rice. |

Coquito a Holiday Favorite Drink

NOTE: We all love to cook in my house; grandma still stews a good Puerto Rican Arroz con Gandules, mom makes the best pasteles,dad the best pork roast, my sister prepares the best coquito for the holidays, but before entertaining and trying with freinds I try it on myself first, knowing the end results gives much pleasure when serving family and freinds. The recipe's provided are the way we do things around our house. Here are some of my favorite and tested, try them, you just may enjoy them for years to come, making them a favorite of your own. Coquito a holiday favorite drink

2 cans of dried coconut (optional ripe coconut)

2 cups of Puerto Rico Rum (preferably white)

1 Can of condensed milk (sweet condensed milk)

4 egg yolks

pinch of Nutmeg or all spice or cinnamon (to sprinkle when serving)
Putting it together:

In an electirc blender add 1/2 of Puerto Rican Rum, and 1/2 of the coconut meat, blend well then pass through a muslim cloth, repeat the process including the liquid of the mixture.

pour the liquid back into the blender and add egg yolks and mix

add condensed milk and mix well

Mix all well, and store in glass bottle (s)

keep refrigerated until use, sprinkle with any of your favorite spices and serve
